2 gallons tomatoes (peeled and chopped) 3/4 c. vegetable oil 1 c. white vinegar 1 c. hot pepper, chopped 1 c. onion, chopped 2 tbsp. garlic, chopped 1/4 c. salt Cook tomatoes until bubbly. Add the rest of the ingredients; mix and stir as you bring to a boil. Simmer 30 minutes or until thick. Put in jars and water bath 30 minutes or process in a pressure cooker. Using Roma tomatoes makes a much thicker and rich salsa. Use rubber gloves when chopping hot peppers. They will burn your hands. Also, if you like hot salsa, do not seed your hot peppers. |
