OATMEAL BREAD 
1 c. quick cooking oatmeal
2 c. boiling water
2 packets dry yeast
1/3 c. warm water
1/2 c. orange marmalade
2 tbsp. vegetable oil
2 1/2 tsp. salt; optional
3 c. whole wheat flour
3 c. white flour

Soak oats in boiling water; cool until lukewarm about 30 minutes. Soften yeast in warm water. Add marmalade to oats. Stir in oil, salt, and softened yeast.

Add flour, 2 cups at a time, mixing well after 4 cups are added, then knead in last 2 cups. Let rise, pinch down and make 2 loaves. Rise until double. Bake on lowest rack at 325 degrees for 50 minutes.
