ZESTY ZUCCHINI DIP 
2 c. zucchini, diced
1 tbsp. chopped onion
1/2 c. tomato juice
1/2 tsp. salt
1/8 tsp. dried basil leaves, crushed
1 (8 oz.) pkg. Neufchatel cheese, cubed
1 tbsp. bacon flavored bits

In saucepan combine zucchini, onion, tomato juice, salt and dried basil leaves. Simmer covered for 20 minutes. Put into blender.

Add Neufchatel cheese. Cover and blend on high speed until mixture is smooth. Remove from blender and chill. Just before serving, stir in bacon bits. Yields 1 2/3 cups.
