ZESTY CARROTS 
4-5 lg. carrots cut in thirds, then sm. strips
1 tsp. salt
2 tbsp. grated onion
2 tbsp. horseradish
1/2 c. mayonnaise
1/4 tsp. pepper
Ritz cracker crumbs

Boil carrots for 6-8 minutes with 1 teaspoon salt. Save 1/2 cup of water; add onion, horseradish, mayonnaise and pepper. Mix. Drain carrots, place in greased dish. Pour mixture over carrots. Top with Ritz cracker crumbs. Bake 15 minutes at 350 degrees.
