HOMEMADE FRUIT ROLL-UPS 
8 oz. dried fruit (apples, pears, peaches, apricots or mixed fruit)
1 1/2 c. water
Cooking spray

In medium saucepan, bring fruit and water to boiling. Reduce heat. Cover and simmer (apples for 15 minutes, all other fruit for 30 minutes). Drain off liquid and cool. Puree fruit in blender. Line a large baking sheet with aluminum foil and spray with cooking spray. Spread fruit on foil in a thin even layer. Place in 300 degree F. oven for 25 minutes. Turn off oven and let fruit dry for 8 hours or overnight. DO NOT OPEN OVEN! Lift fruit off the foil and roll up. Store in moisture and vapor proof wrap. Keeps in the refrigerator up to 3 months. Keeps in the freezer up to 6 months.
