SPAETZLE 
2 1/2 to 3 c. flour
1 1/8 tsp. salt
1/8 tsp. pepper
1/8 tsp. ground nutmeg
3 lg. eggs
1 c. milk
2 qts. water
1 tbsp. vegetable oil

Into a large bowl, sift flour, 1/8 teaspoon salt, and spices. In a small bowl, beat eggs and milk; pour into well dry mixture. Stir until sot dough forms. In large saucepan, combine water, oil, and remaining salt. Heat to boiling. Place about 1/3 of dough in a lightly oiled colander and hold it over boiling water. Using a wooden spoon, gently push dough through the holes into boiling water. Repeat. Cook spaetzle until water returns to a boil and spaetzle rises to surface, about 1 minute; drain.
