CARROT-TUNA SALAD 
2 c. shredded carrots
4 tbsp. minced onion
1 c. celery, diced
2 sm. cans tuna, salmon or chicken (can also use shrimp)

Add dressing:

1 c. salad dressing (mayonnaise type)
1/2 tsp. prepared mustard
2 tbsp. cream or milk

Toss dressing with other ingredients and chill.

Just before serving, add:

4 hard boiled eggs, sliced or diced
1 (4 oz.) can shoestring potatoes
