VEAL MARSALA 
12 veal cutlets
Flour
Butter
1 1/2 lb. sliced fresh mushrooms
2 tbsp. chopped chives
2 tbsp. chopped parsley
1 1/2 c. beef broth
3/4 c. marsala wine
Paprika, salt, pepper

Dust veal slices with flour. Saute quickly 3 or 4 slices at a time in butter, until brown. Transfer slices to a baking dish, sprinkle with paprika. Add more butter if necessary and repeat process with the rest of the cutlets. Melt more butter, add mushrooms and saute about 5 minutes. Add chives, parsley, salt, pepper, beef broth, and marsala. Simmer 5 minutes. Pour over veal slices. Bake at 350 degrees for 30 minutes.
