DAD'S CHOPMEAT DISH (GRANDPA DUFFY'S) | |
1 (26-28 oz.) can tomatoes 1 med. onion 1 med. green pepper 1 lg. clove garlic 1 lb. ground beef 1 sm. onion 1 c. bread crumbs 1 inch thick slice Velveeta Cheddar cheese, cubes 2 eggs 1/4 c. milk Cook tomatoes, sliced onion, sliced green pepper, garlic cut in two, and seasoning: salt, pepper, oregano, sugar. Cook about 1 hour, add water if dish is preferred juicy. Brown meat with onion and salt and pepper. Mix bread crumbs and cubed cheese. In Pyrex or Corning Ware casserole dish, place meat on bottom. Cover with cheese and crumbs. Then cover with tomatoes. Beat 2 eggs with bit of milk and pour on top. Bake until eggs are brown and cooked at 350 degrees for 30 minutes, give or take. |
