FILA CHICKEN PACKETS
4 chicken breast halves
3/4 c. chopped green onion with tops
3/4 c. mayonnaise
3 tbsp. lemon juice
1 tsp. garlic powder
3/4 tsp. dried tarragon or 1/4 c. minced parsley
6 sheets fila dough
Pepper to taste
1/2 c. unsalted butter
1/4 c. Parmesan cheese

Bone chicken breasts and cut into 1/2 inch cubes. Add onion, mayonnaise, garlic powder, tarragon (or parsley), lemon juice, pepper and mix well.

Melt butter (adding more garlic if desired). For each packet, place 1 sheet of fila on work surface. Brush half the sheet with melted butter, fold remaining half of sheet diagonally over first half and brush top of sheet again. Center about 6 pieces of chicken mixture on fila, about 3 inches up from the bottom of sheet. Fold bottom up over chicken, then fold in sides over the chicken, completely enclosing it; then roll up the package. Continue with other chicken and fila.

Place the packets slightly apart in an ungreased baking pan. Brush with butter; sprinkle with Parmesan cheese. Bake uncovered in a 375 degree oven for 25 to 30 minutes until golden brown. 6 servings. (You may make smaller packets for an appetizer size serving.)

This may be frozen at this point, packing in a single layer in a tightly sealed container. Thaw completely in the container before baking.
