MOZZARELLA IN CAROZZA 
12 slices white bread, crusts trimmed, halved diagonally to make 24 triangles
1 lb. mozzarella, in 12 slices
Olive oil
1/2 c. flour
3 eggs
2 tbsp. milk

Make sandwiches using 2 bread triangles to enclose 1 cheese slice. Heat oil until very hot in a deep fryer or large heavy saucepan. Spread flour onto a sheet of wax paper.

In shallow bowl, beat together eggs, milk and a pinch of salt. Dip sandwiches in egg mixture, letting any excess run off. Dredge lightly in flour.

Fry sandwiches in batches, in hot oil, until golden on both sides. Using a slotted spoon, transfer fried sandwiches to paper towels to drain.
