SASSY ZUCCHINI | |
1 lb. ground beef 1 c. chopped onion 1 lb. can tomatoes, cut 1 (1 oz.) env. spaghetti sauce mix 1 c. uncooked pkg. precooked rice 1 1/2 lb. zucchini, cut in 1" strips (4 c.) Cook beef and onion until meat is browned. Pour off fat. Stir in undrained tomatoes, sauce mix, 3/4 cup water and 1 teaspoon salt. Bring to a boil. Stir in rice and zucchini. Cover tightly; reduce heat. Simmer, stirring occasionally, 15-20 minutes or until zucchini is tender. Serves 6. Franklin, VA |
