BUTTERMILK FUDGE CAKE 
2 c. sugar
1 c. oil
2 eggs, unbeaten
2 1/2 c. flour
1/2 tsp. salt
5 tbsp. cocoa
1 c. hot water
2 tsp. baking soda
1 tsp. vanilla
1 tsp. baking powder
1 c. buttermilk

Combine ingredients in order given and beat for 2 minutes. Batter will be thin. Bake at 350 degrees for 30 minutes. Makes 3 (8 inch) layers or 1 oblong cake. Grease and flour pans.

FILLING & FROSTING:

1 c. sugar
1/4 lb. butter
1 1/3 c. flaked coconut
1 c. evaporated milk
3 egg yolks
1 tsp. vanilla
1 c. chopped pecans

Combine milk, sugar, eggs, butter and vanilla. Cook until thickened. Add coconut and pecans. Frost cake when cool.
