CHICKEN MARBELLA 
8-12 chicken breast halves
Cloves of garlic, peeled & finely minced
4 tbsp. dried oregano
Salt & pepper to taste
1/2 c. red wine vinegar
1/2 c. olive oil
1 c. pitted prunes
1/2 c. pimento-stuffed green olives
1/2 c. capers with a little juice
4 bay leaves
1/4 c. brown sugar
1 c. white wine
Parsley for garnish

In a large container combine everything except brown sugar, wine and parsley. Cover and marinate, refrigerated, overnight.

Preheat oven to 350 degrees. Arrange chicken in single layer in 1 or 2 large shallow baking pans and spoon marinade over it evenly. Sprinkle pieces with brown sugar and pour white wine around them. Bake 50-60 minutes, basting occasionally with pan juices, until chicken is done. Garnish with parsley.
