ENCHILADAS 
3-4 tbsp. flour
1/2 stick butter
1 1/2 c. Velveeta cheese
2 c. milk
1 can green enchilada sauce
1 sm. can mild green chiles (optional)
Pimentos (optional)
1 lb. ground meat
1 lg. onion, chopped
1 c. grated Cheddar or Monterey Jack cheese
Flour tortillas

Melt butter, stir in flour and mix (just like you're making gravy). Add milk, chunked up Velveeta, green enchilada sauce, green chiles and pimentos. Brown meat with onions. Roll tortillas with ground meat, onion, and grated cheese. After sauce has melted and thickened slightly, pour over rolled enchiladas. Bake in a 350 degree oven, covered until bubbly and slightly browned.
