1 lb. ziti 8 eggs 2 lb. cottage cheese 1 stick Fleischmann's butter 5 c. milk 1 (8 oz.) cream cheese 3-4 tbsp. flour Boil noodles; drain. Grease large baking pan with butter; place noodles in pan. In large bowl, mix 6 eggs, beat well; also all of cottage cheese; 2 1/2 cups milk and pour on top of noodles, mixing it all well. Add a pinch of salt. Make cream sauce separately: beat 2 eggs in a small bowl; add 2 1/2 cups of remaining milk. Add softened cream cheese (no lumps); set aside. Over low flame, melt stick of butter. Gradually (one tablespoon at a time) add flour. Begin to pour cream sauce ingredients into pot stirring constantly. Pour about one cup at a time. When mixture is stirred well it should produce a creamy sauce (called pasamel). Pour this sauce on top of noodles. Bake uncovered 45 minutes at 350 degrees. Top should be slightly golden. Serves 12. |
