IRISH SODA BREAD 
3 c. flour
2/3 c. sugar
1 tbsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 1/2 c. raisins
2 eggs
1 3/4-2 c. buttermilk
2 tbsp. melted shortening

Sift together in large bowls flour, sugar, baking powder, soda and salt. Stir in raisins. Combine eggs, buttermilk and shortening. Add liquid mixture to dry ingredients and mix, just until flour is moistened. Turn batter into a 5 1/4 x 9 1/2 inch pan. Bake at 350 degrees for 1 minute.
