EASY RICE PILAF 
3 tbsp. butter
1/4 to 1/2 c. minced onion
1 c. uncooked regular white rice
1 can condensed consomme
2/3 c. water
4 oz. can sliced mushrooms

Or 1 can Swanson's beef broth. Do not add the 2/3 cup water if you use the broth. Melt butter in skillet. Add onion and rice. Saute about 10 minutes or until pale yellow. Add consomme, water, and mushrooms including half of the liquid. Bring to a boil and turn into a 1 1/2 quart casserole. Cover tightly and bake in a 400 degree oven for 25 minutes or until rice is tender and all the liquid is absorbed. Serves 6.
