CHEESY VEGGIE CASSEROLE 
1/2 lb. American cheese
1/2 c. butter
1 bag mixed vegetables of your choice, thawed and drained
1 c. crushed butter crackers

Cut cheese into cubes. Place in saucepan with 1/4 cup butter. Heat over medium heat. Place veggies in 2 quarts casserole dish. Pour cheese mixture over; mix well. Melt remaining butter. Stir in cracker crumbs and sprinkle over top. Bake, uncovered, at 350 degrees for 20 to 25 minutes. This is also good made with zucchini or broccoli.
