OVEN FRIED CHICKEN 
1 chicken (3 lbs.), parts or breasts, skinned and cut
6 tbsp. flour
1 tsp. salt
Dash pepper
1 egg, beaten
2 tbsp. water
1 1/2 oz. corn flakes, crushed
1 oz. Parmesan cheese
8 tsp. butter, melted (I use less then this for breasts)

Mix flour, salt and pepper. Set aside. Mix corn flakes and Parmesan cheese. Set aside. Mix egg and water. Coat chicken with flour mix, dip in egg mix and roll in crumb mix. Place in glass baking dish (9 x 13 inch) sprayed with Pam. Drizzle with butter. Bake at 375 degrees for 1 hour or until tender. A little extra work but well worth it.
