CRISPY OVEN FRIED CHICKEN (FOR A
CROWD)
 
10 whole chicken fryers, cut into pieces
3 tbsp. chili powder
3 tsp. thyme
4 1/2 cups buttermilk
4 1/2 cups flour
4 1/2 cups cornmeal
6 tsp. salt
3 tsp. oregano
1 1/2 cups Parmesan cheese
3/4 cup (1 1/2 sticks) butter

Melt butter in large pan or roaster. Salt chicken. Dip in milk then in bag where dry ingredients are mixed. Set oven at 400°F and bake uncovered for about 25 minutes. Turn at least once. Cook until brown on both sides.

Makes about 100 serving pieces.
