OATMEAL COCONUT COOKIES 
1 c. white sugar
1 c. brown sugar, firmly packed
1 c. vegetable shortening
2 c. flour
1/4 tsp. salt
2 eggs, beaten
1 c. coconut
1 c. nuts; optional
1 tsp. baking soda
1 tsp. baking powder
1 c. quick oatmeal
1 tsp. vanilla

Cream together sugars and shortening. Add eggs, then remaining ingredients. Drop by teaspoon onto greased cookie sheet. Bake at 350 degrees for 10-12 minutes or until golden brown. Yields 5-6 dozen.
