NELSON'S SWEDISH TEA RING | |
2 pkg. active dry yeast 1/2 c. warm water 1/2 c. lukewarm milk (scalded & then cooled) 1/2 c. sugar 1 tsp. salt 2 eggs 1/2 c. shortening 4 1/2 to 5 c. all-purpose flour 2 c. chocolate chips 1/2 c. chopped nuts 1 c. chopped Maraschino cherries, well drained FILLING: 1/2 c. sugar 1/4 c. shortening 1 egg 1 tsp. salt 1 tsp. vanilla Dissolve yeast in warm water. Stir in milk, sugar, salt, eggs, shortening and 2 1/2 cups of the flour. Beat until smooth. Mix in enough of the remaining flour to make dough easy to handle. Turn dough out on lightly floured board and knead until smooth and elastic. Place in greased bowl, turn greased side up, cover and let rise in warm place until double, about 1 1/2 hours. Punch down dough. Divide dough in half. Roll out half of dough into a rectangle 20 x 8 inches. Spread 1/2 of filling on dough and sprinkle with 1/2 of the chips, 1/2 of the nuts and 1/2 of the cherries. Roll up dough and form a ring. Place on baking sheet. Use scissors to cut deep slashes 1/2 inch apart. Turn each slice on its side alternating left to right. Let rise 1/2 hour. Bake at 350 degrees for 20 minutes. Repeat for second ring. Makes 2 rings. Frost with powdered sugar icing. |
