WALNUT CHIP MUFFINS 
1/2 c. unsalted butter
1/2 c. brown sugar
1/2 c. white sugar
3 tbsp. instant coffee
2 tsp. vanilla extract
2 eggs
2/3 c. milk
1 3/4 c. flour
1/2 tsp. salt
1 tbsp. baking powder
3/4 c. chocolate chips
1 1/2 c. chopped walnuts

Preheat oven to 350 degrees. Grease and flour twelve 3 inch muffin pan cups. Cream the butter with the sugars, coffee, and vanilla. Beat together the milk and eggs. Combine the flour, salt, and baking powder. Alternately add the wet and dry ingredients to the butter mixture. Stir to combine. Add the chips and walnuts. Fill the tins full. Bake 20-25 minutes. Cool 5 minutes, then remove from tins and cool on racks.
