1/4 c. honey
1 c. buttermilk
1 egg
1 c. corn meal
1 c. unbleached white flour
2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
Tbsp. melted butter

Beat together egg, buttermilk and honey. Mix well together all dry ingredients. Combine all ingredients, including melted butter, and mix well.

Spread into buttered 8 inch square pan and bake at 425 degrees for 20 minutes. Serve hot with a chunk of Cheddar cheese on top.
