PARSNIPS (PETREZSELYEM FOZELEK) 
3 c. parsnips, cut into 1 inch pieces
3/4 c. boiling water
1/2 tsp. salt
3 tbsp. butter
3 tbsp. flour
1 c. milk
Salt and pepper to taste
Paprika to sprinkle

Place parsnips in water with salt. Bring to a boil. Simmer, covered, about 20 minutes. Drain.

In a small skillet put in the butter and when melted stir in the flour and then slowly add the milk and cook, stirring continuously to prevent lumping. When thickened, add salt and pepper and pour over the drained parsnips. Sprinkle with paprika. Serve hot.
