BAKED BEANS | |
1 bag peas or Navy beans 1 tsp. baking soda 1/2 c. dark molasses 1 onion 1 tsp. dry mustard 2 tbsp. ketchup Salt pork and bacon Leave pork in one piece and bacon in strips. Soak beans in baking soda and water overnight. Replace with fresh water in morning and boil. Cook until soft, not mushy (1/2 to 1 hour). Keep water. In bowl, mix molasses, mustard, and ketchup. Cut up onion. Drain beans but keep water. Put into casserole. Add the mixture and onion. Put pork in center and bake in slow oven 4-5 hours (leave pork in one piece). Add a little of the water every once in a while. Beans get darker the longer they cook. Put bacon in strips on top for the last hour. |
