AVGOLEMONO SOUP 
3 qts. chicken stock
1 c. plain yogurt
2 beaten eggs
1/4 c. lemon juice
1 c. cooked rice
2 tbsp. minced parsley
1/2 c. minced cooked chicken

Bring stock to boiling. Add 2 cups boiling stock to the yogurt, eggs and lemon juice. Mix well. Place all ingredients together in the soup pot. DO NOT BOIL. Very good!
