4 3/4 c. unsifted flour 3 tbsp. sugar 1 tbsp. salt 2 pkgs. dry yeast 2 tbsp. butter 1 tbsp. sugar 2 tsp. salt 1 egg white plus 1 tbsp. water Mix 1 1/2 cups flour, 3 tablespoons sugar, 1 tablespoon salt and yeast. Beat 1 1/2 cups water and butter to 120 degrees. Add to dry ingredients. Beat 2 minutes at high speed for 2 minutes. Stir in more flour to make a pliable dough. Knead 10 minutes. Set in greased bowl, turn to grease top. Cover, let rest 15 minutes. In a large skillet, simmer 1 inch of water, sugar and salt. Divide dough into 8 pieces. Shape into balls. With floured finger, poke 1 inch in each. Drop bagels into hot water, cook 3 minutes. Turn, cook 2 minutes turn again, cook for 1 minute. Drain on paper towels. Repeat with rest of balls. Set on greased cookie tin. Brush with egg white mixture. Sprinkle with sesame seeds or coarse salt if desired. Bake at 375 degrees for 25 minutes. |
