PEANUT BUTTER CUPCAKES 
1 cup sugar
1 1/4 cup flour
1/4 cup oil
1 1/4 cup buttermilk
1 egg
1/2 tsp. baking powder
1 tsp. baking soda
1 cup peanut butter
1 tsp. vanilla

Icing:

2 1/2 cups powdered sugar
2/3 cups peanut butter
1/3 cup milk
1 tsp. vanilla

Mix together sugar and flour. Mix oil, buttermilk, egg, baking powder and soda; then add to sugar and flour. Add peanut butter and vanilla. It's easier to mix with a fork. Fill paper cups about 1/2 full.

Bake 12 to 15 minutes at 350°F.

Makes about 30 cupcakes.

For icing, mix all ingredients with a fork. If too thin, add a little more powdered sugar. Ice cooled cupcakes.
