ANADAMA BREAD (BIG BATCH)
The name comes from a New England fisherman whose lazy wife Anna served him cornmeal mush and molasses for every meal. One day tired of the same fare, he mixed with flour and yeast and baked it, saying "Anna, damn her".

Blend together: 5 tbsp. yeast

Let stand 5 minutes. Add all to yeast mixture: 2 c. molasses 3 c. cornmeal 2 1/2 tbsp. salt

Beat well. Add enough flour to make a firm dough and knead by hand. Place in greased bowl; let rise in pan 45 minutes in warm place. Punch down, shape and place in greased bread pans. Let rise until double in bulk. Bake in 400 degree oven for about 25 or 30 minutes. Turn out on racks and butter tops. Makes 6 large loaves.
