CARROT CASSEROLE 
4 c. carrots, grated
1/2 c. onion
1 tbsp. sugar
1 c. Velveeta cheese
1/2 stick butter
Ritz crackers

Boil carrots, onion and sugar until tender. Melt butter and crumble crackers. Pour melted butter over Ritz crackers. Fold in cheese and cracker mixture with carrots. Bake at 350 degrees for 25 minutes.
