"ASSURED" HOLLANDAISE SAUCE 
3 egg yolks
1 tbsp. tarragon vinegar
Few grains of cayenne pepper
1/2 tsp. salt
12 tbsp. butter
1/2 tsp. arrow root

Put the egg yolks in a mixer and beat until very light and fluffy. Add the vinegar and cayenne pepper and continue beating. Add salt and beat some more. Melt butter in a pan, hot but not brown. When egg yolks are really thick, pour the melted butter in slowly. Add arrow root last little by little. Makes 1 cup.
