COCONUT CAKE 
1/2 c. butter
1 c. sugar
3 eggs
2 c. pastry flour
2 tsp. baking powder
1/2 c. milk
1 tsp. vanilla

Cream butter and sugar well. Add eggs (beaten), then milk. Add flour last, sifted with baking powder.

Bake in a moderate oven about 15 minutes. This makes 2 thick or 3 thin layers.

Icing:

2 c. sugar
1/2 c. water
Baker's canned coconut
3 egg whites
1/4 tsp. rose extract or vanilla

Cook sugar and water until it threads and beat whites of 3 eggs until very light. Pour sugar over egg whites slowly and beat until creamy. Add 1/4 rose extract or vanilla. Spread over cake. Sprinkle

Baker's canned coconut thickly between layers and over top and sides.
