EGGPLANT CREOLE 
1 med. eggplant
3 tbsp. butter
3 tbsp. flour
3 lg. tomatoes or 2 c. canned tomatoes
1 sm. green pepper, chopped and seeded
1 sm. onion, chopped
1 tsp. salt
1-2 tbsp. brown sugar
Grated cheese

Peel and dice eggplant. Cook 10 minutes in salted boiling water; drain and place in greased baking dish. Melt butter, add flour and stir. Add tomatoes, pepper, onion to butter and flour mixture. Also add salt and brown sugar. Cook 5 minutes. Pour over eggplant. Dot lightly with grated cheese. Bake at 350 degrees for 30 minutes.
