BROILED EGGPLANT 
Eggplant
Butter
Salt
Pepper

Wash eggplant but do not peel it. Cut off stem end and slice cross wise about 1/2" thick. Brush generously with softened butter and sprinkle lightly with salt and pepper. Place on broiler rack or cookie sheet and brown lightly under the broiler unit. Turn with a spatula and butter and season other side. The slices keep their shape well and are very tasty.
