INDIAN PUDDING 
1/3 c. stone ground yellow cornmeal
3 tbsp. skim milk powder
4 c. boiling milk
1/2 c. dark molasses
2 tbsp. safflower oil
1/2 tsp. cinnamon
1/2 tsp. ginger
1/2 c. raisins
2 eggs, well beaten
1 c. cold milk

Cook the yellow cornmeal and skim milk powder in boiling milk in top of a double boiler. Stir constantly, cooking for 15-20 minutes. Stir in the dark molasses, oil, cinnamon, ginger, and raisins. Add the well beaten eggs. Pour into a well greased baking dish, pour 1 cup cold milk over everything (don't stir it!) and bake for 1 hour at 325 degrees. Serve with ice cream or heavy cream.
