KEY LIME PIE | |
1 env. unflavored gelatin 1/2 c. sugar 1/4 tsp. salt 4 egg yolks 1/2 c. lime juice 1/4 c. water 1 tsp. grated lime peel (optional) Few drops green food coloring Thoroughly mix gelatin, sugar and salt in saucepan. Beat together egg yolks, lime juice and water. Stir into gelatin mixture. Cook and stir over medium heat until comes to boiling. Remove from heat, stir in grated peel, add food coloring until pale green. Chill, stirring occasionally until mixture mounds slightly when dropped from spoon. 1/2 c. sugar 1 (9-inch) pie shell, pastry or graham cracker 1 c. heavy cream, whipped or 1 container Cool Whip Beat egg whites until soft peaks form. Gradually add sugar, continuing beating. Fold gelatin mixture into egg whites. Fold in whipped cream. Pour into pie shell. Chill until firm and serve. |
