CARROT-CUCUMBER RELISH 
4-6 unpared cucumbers, coarsely ground (3 1/2 c.)
6 med. carrots, coarsely ground (1 1/2 c.)
2 med. onions, coarsely ground (1 c.)
2 tsp. salt
1 1/2 c. vinegar
1 1/2 tsp. mustard seed
2 1/2 c. sugar
1 1/2 tsp. celery seed

Combine ground vegetables; stir in salt. Let stand 3 hours and drain. Combine remaining ingredients and bring to boil. Add vegetables; simmer uncovered 20 minutes. Seal at once in hot jars. Chill before serving.
