RON NORBY'S VERY FAST TUNA
NOODLE CASSEROLE
 
3 qts. water (1 tsp. salt & 1 tbsp. olive oil)
1 (12 oz.) pkg. extra lg. noodles
10 3/4 oz. can cream of mushroom soup
8 oz. can mushrooms, sliced
12 1/2 oz. can tuna in water
8 oz. pkg. extra sharp cheddar cheese, shredded
Coarse ground black pepper to taste

Place water in bottom of large double boiler. Boil noodles in water according t package directions until tender, then drain in colander. While noodles are boiling, open all cans and drain tuna and mushrooms of their liquid. Return boiler to heat and add mushroom soup, mushrooms and tuna. Break up tuna with spoon and mix all ingredients until thoroughly heated. Add cheese and continue mixing until cheese is melted. Add drained noodles and mix until well combined with other ingredients. Add pepper to taste. Serves 4 to 6.

VARIATION: Add 1 to 2 cups thawed frozen vegetables at time cheese is added and continue stirring until heated throughout. Vegetable suggestions: Peas and carrots, broccoli, asparagus, zucchini, corn or any favorite vegetable.
