TEXAS CAVIAR 
2 (No. 2) cans black eyed peas
1/3 c. peanut oil
1/3 c. wine vinegar
1 clove of garlic
1/4 c. finely chopped onion
1/2 tsp. salt
Cracked pepper to taste

Drain the peas and place in a bowl. Add the oil, vinegar, garlic, onion, salt and pepper and mix well. Store in the refrigerator for 24 hours, then remove the garlic. Let set in the refrigerator for 2 days to 2 weeks before serving.
