TEXAS CAVIAR 
1 can black-eyed peas, drained
1 can Shoe Peg corn, drained
1 medium jar chopped/diced pimento, drained
1 large green bell pepper, chopped
1 medium onion, chopped

Marinade:

3/4 c. sugar
1/2 c. vinegar
1/2 c. vegetable oil
1/4 bottle tiger sauce (found with marinade sauces)

Mix ingredients together. Put in a dish with a cover. Pour marinade over mixture and refrigerate, covered, for several hours or best overnight, if time. Drain before serving. Serve with Fritos. Must do ahead.
