CHEDDAR CHEESE POTATO SOUP 
3 c. chicken broth
4 c. milk
1/4 c. chopped celery
1/4 c. chopped onion
1 tsp. salt
1 1/2 c. grated potatoes
1/2 c. grated carrots
2/3 c. flour
4 c. sharp cheddar cheese
1 tsp. pepper

Mix all the ingredients together except milk, flour and Cheddar cheese. Simmer until vegetables are tender. Mix flour and milk and add to above mixture. Then add Cheddar cheese. Simmer on low until it thickens. Serves approximately 8 to 10.
