JERK CHICKEN PIZZA 
1 pita bread
4 tbsp. pizza sauce (your choice)
2 oz. shredded mozzarella
6 oz. boneless chicken breast
Caribbean jerk seasoning (your favorite)
1 onion, chopped
1 orange sweet pepper, chopped
1 yellow bell pepper, chopped
fresh whole button mushrooms, sliced
salt and pepper, to taste
1 tbsp. shredded Parmesan cheese

Thaw chicken (if needed) and season with Jerk seasoning and grill. Let rest 15 minutes and slice thin.

Sauté onion, peppers, mushrooms in a little olive oil and season with salt and pepper.

Slice Pita in half and spoon on pizza sauce (jarred is fine, I use tomato sauce and add pizza seasoning to taste). Top with Mozzarella, then chicken, then vegetables, finally Parmesan cheese.

Bake at 400°F until cheese just starts to turn brown, about 9 to 12 minutes.

Remove from oven, let cool a bit, and enjoy!

Recipe makes TWO (6-inch) pizzas, under 350 calories each.
