VEGETABLE SOUP 
6 c. water
2 ribs celery, diced
3 potatoes, diced
1 c. onion, diced
1 c. carrots, diced
1/2 c. cabbage, shredded
1/2 c. broken raw noodles or 1/2 c. millet or barley
1 tbsp. oil
1 tsp. salt
1 env. George Washington seasoning (brown)
1 tbsp. parsley, minced
2 c. V-8 or tomato juice

Optional Additions: Diced eggplant Diced okra Diced summer squash Chopped tomatoes

Start water boiling. Add all ingredients. Cook about 35 to 45 minutes. Add V- 8 or tomato juice after vegetables are tender. Yield: 10 cups.
