LEMON SQUARES 
1 c. butter, softened
3/4 c. confectioners' sugar, separated
1 tsp. vanilla extract
2 c. flour
4 eggs
1 1/2 c. sugar
Grated rind of 1 lemon
6 tbsp. fresh lemon juice

Generously grease a 9x13 inch baking dish. In mixer bowl, combine 1/2 cup confectioners' sugar and vanilla and beat until fluffy. Gradually add flour, mixing well until combined. Spread evenly in pan and bake 15 to 20 minutes.

While pastry bakes, in bowl combine eggs, sugar, lemon rind and lemon juice and stir to combine. Do not beat. Pour lemon mixture over baked cookie layer. Return pan to oven and bake until topping is set and lightly browned, 18 to 22 minutes.

Sift 1/4 cup confectioners' sugar over warm cookies. Cut into bars. Remove from pan when cool. Makes 3 dozen.
