BATTER FRIED VEGETABLES 
3/4 c. cornstarch
1/4 c. flour
1 tsp. baking powder
1/2 tsp. salt
1/4 tsp. pepper
1/2 c. water
1 egg, slightly beaten
1 qt. oil
4 c. veggies (onions, zucchini, carrots, mushrooms, peppers, etc.)

In bowl, mix dry ingredients. Stir in water and egg until smooth. Heat oil to 375 degrees. Dip veggies into batter (occasionally stir batter). Fry veggies a few at a time. Fry, turning once, 2 to 3 minutes or until crisp and golden. Drain on paper towels. Also great to use for boneless chicken pieces.
