MANDARIN ORANGE SALAD 
2 pkgs. orange gelatin
3 c. liquid (juice and water)
2 c. miniature marshmallows
1 pkg. (3 oz.) cream cheese
1 (16 oz.) can crushed pineapple
2 (11 oz.) cans mandarin oranges
1 c. whipped topping or whipped cream
Cherries and mint leaf (optional)

Drain juice form oranges. Add enough water to make 3 cups liquid. Heat liquid and add gelatin, stirring to dissolve. Cut cream cheese into small pieces and add to mixture. Cool. Add fruit and marshmallows.

Fold in whipped cream and pour into a 9x13x2 inch flat container and refrigerate. Cut into squares and decorate each with whipped cream, cherry, and mint leaf if desired.

Note: (I have made a half recipe successfully.)
