CHICKEN ALOHA | |
2 lb. chicken Salt and pepper 1/4 c. melted butter 4 pineapple rings 4 peach halves Pineapple sauce Cut chicken into pieces. Salt, pepper and brush with melted butter. Place on broiler rack; broil 8 inches from the flame for 35 minutes, turning 2 or 3 times and brushing with melted butter. Add fruit around chicken and brush chicken and fruit with pineapple sauce. Broil 5 minutes. Serve with remaining pineapple sauce. Serves 4. PINEAPPLE SAUCE: 1/2 c. butter, melted 1 tsp. cornstarch 1 tsp. grated lemon rind 1/4 c. lemon juice 1/3 c. pineapple juice 2 tbsp. minced onion 1 tsp. soy sauce 1/4 tsp. thyme Combine all ingredients. Cook 5 minutes on low heat, stirring frequently. |
