POTATO CASSEROLE 
2 lb. pkg. frozen hash brown potatoes
1 c. melted butter
1 pt. sour cream
1 can cream of chicken soup
1/2 c. chopped onion
2 c. shredded Cheddar cheese
1 tsp. salt
1/2 tsp. pepper
2 c. cornflakes

Combine potatoes and 1/2 cup melted butter. Stir in sour cream, soup, onion, cheese, salt and pepper. Grease a large baking dish and put mixture in dish. Combine remaining melted butter with the cornflakes and sprinkle on top. Cover with foil and bake at 350 degrees for 45 minutes.

Serves 6-8.
